A Week Of Clean & Healthy Eating

Why hello there everyone, how has your week been? I've been feeling fab! I think it may be down to my new healthy eating kick, but if this is how it feels to eat fresh wholesome food then YIPPEE i'm on board. Why did i not know about all these luscious foods before now?

So, lets take a look at some of the lovely stuff i've been eating this week!


First up was this gorgeous home made carrot & parsnip soup, which was so quick and simple. 6 carrots, 3 parsnips, 2 onions, veg stock to cover & 2 garlic cloves. Cook & blend. Voila! I added some dried cumin & coriander to mine to give it some extra warmth & i thoroughly enjoyed it.

My next recipe was found on a blog by the lovely Gemma. It was for a creamy courgette soup of which the recipe & method can be found here.

Midweek shop

After finding lots of yummy recipes on the internet i went to Tesco in search of some more healthy products that i had read about. One of these products was Quinoa which turned out to be surprisingly yummy(see pic below) Also the Naked bars which are my guilt free treat.

One of the websites that i have gotten many of my meal ideas from this week is nicsnutrition & these sweet potato fries are no exception. This is a plate of healthy food my 5 year old & i made. Home made fish fingers in wholemeal breadcrumbs using fresh cod fillet, sweet potato fries & mushy peas. Both the fish fingers & the fries were oven baked. Very healthy & very tasty. Amelia enjoyed the process of making the fish fingers & cleaned her plate which is a real rarity for her. RESULT!

Another fab recipe from  Nicsnutrition was this totally divine houmous which i added some sundried tomatoes to. This gave it a different flavour & added texture as my food processor didn't quite catch all of the tomato. I liked it with the small chunks in though. I had this with some carrot sticks & some Nairns Oatcakes & shared it with my husband. There was plenty left over so we had it as a snack the next day.

Today i enjoyed yet another of Nicsnutritions recipes. These are her healthy salmon fishcakes & let me tell you, you would never guess that they are healthy & low in fat. Another hit with the husband & so so quick to knock up. I served them with iceberg lettuce & a mild salsa on the side as per Nics suggestion. We will definitely be having these again but as my husband suggested, "can we have them with those sweet potato fries next time. Winner!

So there you have it! My week in food, more or less. When i figure out how to make a separate tag for health related posts i will pop these posts away under that heading so that any beauty related ones stay on my main page. To be honest, i've been that busy trying to make myself beautiful from the inside, i have hardly thought about makeup all week. WHAT!! I know?!
